This Paring Knife is a great all-rounder. Its short, narrow blade makes it ideal for slicing smaller fruits and vegetables, peeling vegetables and precision tasks such as hulling strawberries, seeding chillies or deveining prawns.
The knives are taper ground with the forging running down the full length of the handle. Each knife handle incorporates an internal back weight, giving an excellent balance and grip.
Ice hardening processes make the blades exceptionally sharp. These are really professional kitchen knives, superb in quality and beautiful to use. These are razor sharp knives. The high carbon stainless steel blades exploit the latest techniques of steel casting and are then ice hardened to minus 80c. This innovative process stabilises the metallurgical structure of the steel, creating an extremely hard and durable cutting edge.

- David Mellor (1930-2009) was one of the great 20th century designers with an international reputation for his cutlery. He was born in Sheffield and trained originally as a silversmith. Examples of his metalwork are in museum collections all over the world. David Mellor established his own specialist factory in 1990, manufacturing cutlery and kitchen knives. He has drawn on Sheffield traditions of craftsmanship in evolving a product altogether of our time.
